Mushroom soup with beans and rice

Craving comforting foods in the cold days? We know what you mean. Try out this creamy mushroom soup that is also full of protein and fiber.

Ingredients for 2 servings:

dried red beans – 200g

mushrooms (frozen or dried) – 400g

brown rice – 50g

onions – 1 pc

carrots – 1 pc

bay leaf – 6-8 pcs

ground pepper – 1/2 tsp

dried parsley – 4 tsps

dill seed – 1/3 tsp

coriander – ½ tsp


  1. Wash red dried beans and mushrooms (white, honey agaric or any other forest mushrooms) in water and boil in salty water at low temperature for 20-30 minutes.
  2. Wash brown rice, soak it for 15 minutes and add into the soup.
  3. Cut onions and carrots finely, add them into the soup in 20 minutes as it was quietly boiling.
  4. Add a laurel leaf and spices.
