Autumn Recipe: Warm Pumpkin Salad with Chanterelles

A warm autumn salad with delicious hearty pumpkin and delicious chanterelles. Chanterelle mushrooms are a popular and tasty wild mushroom that are quite sought after because they are unable to be grown commercially due to the specific growing conditions required. These mushrooms only grow in the forest and are only available at a certain time of year for a few months – making them even more exotic and popular. Here is a delicious chanterelle recipe to warm your autumn.

You will need for this autumn warm salad:

  • Chanterelles – 200g
  • Pumpkin – 200g
  • Tomatoes – 200g
  • 1 onion
  • Garlic clove
  • Nuts of your choice – 2 tbs
  • Cedar oil – 2 tbs
  • Lemon juice – 1 tbs
  • Parmesan or other hard cheese – 20g
  • Salt & Black pepper to taste
  • Vegetable oil for frying

Preparation:

  • Peel and chop the pumpkin into cubes and bake it in the oven on a baking sheet for 30 mins at 220 degrees celsius
  • Make sure to turn the pumpkin cubes half way through cooking
  • Wash the chanterelles, chop them up and fry in vegetable oil for 12-15 minutes
  • A few minutes before you finish cooking, add finely chopped garlic, lemon juice, salt and pepper
  • Cut the tomatoes into slices
  • Grate Parmesan on a coarse grater
  • Cut the onion into rings
  • Place all prepared ingredients in a salad bowl and pour over cedar oil
  • Sprinkle with nuts and Parmesan
  • For a more pronounced taste, the nuts can be fried in a hot, dry frying pan for 1-2 minutes
