Spelt is a grain that is similar to wheat, that has been cultivated for thousands of years. It is said to be much more nutritious than more modern grains and is a good alternative to normal wheat flour because it can be used to bake in the same way as wheat flour is. It is also known as hulled wheat or dinkel wheat. We have prepared a nutritious recipe for carrot muffins using spelt flour. This recipe usually uses grape sugar but if you cannot find that then you could use something like coconut sugar or maple sugar.
These muffins are really great to keep in a container for a quick breakfast, afternoon snack, sweet treat or lunch box snack.
You will need:
- Spelt flour – 150 g
- Fresh carrots – 100 g
- Eggs – 2 pcs.
- Apples – 150 g
- Cedar or other vegetable oil – 70 ml
- Grape sugar or other sugar replacement (maple sugar or coconut sugar) – 3 tbsp.
- Salt – to taste
- Baking powder – 1 tsp.
- Cinnamon – 0.5 tsp
Preparation:
- Peel the apples and carrots
- Grate the carrots on a coarse grater,
- Cut the apples into cubes.
- In a large bowl, beat eggs with cedar oil and sugar, add carrots and apples, mix.
- In a separate bowl, mix the dry ingredients: flour, sugar, cinnamon, salt and baking powder,
- Then add them to the eggs.
- Mix everything thoroughly.
- Place the finished batter into a lined muffin
- Bake at 180-200 degrees for 20-25 minutes
- Remove from the oven when the muffins are fully cooked through and leave them to cool
