Warm Chanterelle Salad with Cedar Flakes

Chanterelle mushrooms are a tasty mushroom found in forests in various parts of the world. It is one of the most popular wild edible mushrooms due to its fantastic flavour and nutritional value. These mushrooms are an excellent source of b vitamins and antioxidants, making them a perfect addition

What you will need for the Chanterelle Salad (serves 2):

🍁Chanterelles – 200 g

🍁 Tomatoes – 200 g

🍁 1 onion

🍁 1 Garlic Clove

🍁 Cedar flakes – 2 tbsp

🍁 Cedar oil – 2 tbsp

🍁 Lemon juice – 1 tbsp

🍁 Parmesan or other hard cheese – 20 g

🍁 Salt and black pepper to taste

🍁 Optional – chopped rocket (arugula) or flat leafed parsley

Method:

  • Chop up fresh garlic
  • Rinse the chanterelles, cut into pieces and fry (in olive oil, coconut oil or vegetable oil) for 12-15 minutes
  • A few minutes before the chanterelles have fully cooked – add the chopped garlic, lemon juice and salt, pepper to taste
  • Slice up the tomatoes and cut the onions into rings
  • Grate the parmesan on a coarse grater (or chop/grate the cheese that you are using)
  • Place all the prepared ingredients in a salad bowl and drizzle with cedar nut oil
  • Sprinkle the salad with cedar flakes and fresh parmesan
  • Enjoy and have a warm evening!
