Warm Chanterelle Salad with Cedar Flakes

A delicious warm salad of chanterelle mushrooms and cedar flakes – a real autumn dish ๐Ÿ Save this recipe for a cozy dinner with your family or friends.ย 

What you will need (serves 2):

๐ŸChanterelles – 200 g

๐Ÿ Tomatoes – 200 g

๐Ÿ 1 onion

๐Ÿ 1 Garlic Clove

๐Ÿ Cedar flakes – 2 tbsp

๐Ÿ Cedar oil – 2 tbsp

๐Ÿ Lemon juice – 1 tbsp

๐Ÿ Parmesan or other hard cheese – 20 g

๐Ÿ Salt and black pepper to taste

๐Ÿ Optional – chopped rocket (arugula) or flat leafed parsley

Method:

  • Chop up fresh garlic
  • Rinse the chanterelles, cut into pieces and fry (in olive oil, coconut oil or vegetable oil) for 12-15 minutes
  • A few minutes before the chanterelles have fully cooked – add the chopped garlic, lemon juice and salt, pepper to taste
  • Slice up the tomatoes and cut the onions into rings
  • Grate the parmesan on a coarse grater (or chop/grate the cheese that you are using)
  • Place all the prepared ingredients in a salad bowl and drizzle with cedar nut oil
  • Sprinkle the salad with cedar flakes and fresh parmesan
  • Enjoy and have a warm evening!
